Checking out the freeze-drying method, you could easily get the idea of the process by the name. In this, the coffee extract is frozen to about -40°C, and they are transformed into granules. These granules then undergo drying at a low temperature, and they are also kept under vacuum. This method also performs the best in retaining the coffee flavor, with the presence of low temperature.
